I have always loved quiche. So good!

However, I’ve never really been one for making it. I’ve eaten it when other people have made it, but I wasn’t huge on making it myself. But then I came across this recipe from The Pioneer Woman and realized it looked pretty simple to make.

So, for your eating pleasure, here is a simple quiche recipe for you. It’s got all the savory tastes of quiche we enjoy such as mushrooms, ham, and cheese, but also a bit of sweet flavor in the form of a (store bought) shortbread crust.



2 Keebler Shortbread Ready pie crusts

1  7oz can of sliced mushrooms

2 Green Onions, chopped

8 eggs

1 1/2 cups heavy whipping cream

1 cup shredded Monterey Jack Cheese

8oz John Morrell diced ham

Salt & Pepper to taste



Preheat oven to 4oo degrees.

Add the eggs and quiche to a medium bowl then whisk them to combine.


Stir in the green onion, mushrooms, cheese, ham, salt and pepper.


The mixture will be thick.

Pour mixture into the two ready made pie crusts. They will be very full! Since they are so full, I find it easiest to put them on a cookie sheet and cook them on that.


Cover loosely with tin foil (to prevent top from becoming too brown) and bake in the preheated oven for 45 minutes. Remove the foil and bake an additional 10 minutes.

Remove from oven and let it sit for 10 minutes before serving.




My family LOVES my banana chocolate chip bread. So much so that one day my husband asked me if I could turn it into a muffin. I’ve never been much for making muffins. I have one muffin recipe and don’t even make it very often. But, when my husband asked for muffins I was determined to find a recipe.

I looked online but wasn’t able to find a recipe for banana chocolate chip muffins. I realized I would have to try to create my own. I found THIS blueberry muffin recipe and decided to just tweak it to create the banana chocolate chip muffins.

They were amazing! I was so surprised at how well they turned out. But, they came out so well that now I make them all the time.

So, here is my banana chocolate chip muffin recipe (adapted from this blueberry muffin recipe by Colleen).



Muffin Ingredients:
1  1/2 cups all-purpose flour

3/4 cup white sugar

1/2 tsp salt

2 tsp baking powder

1/3 cup vegetable oil

1 egg

1/3 cup  milk

2 very ripe bananas, smashed

Nestle Semi Sweet chocolate chips (put in as many or as few as you like)

Crumb Topping Ingredients:

1/2 cup white sugar

1/3 cup all-purpose flour

1/4 cup butter, cubed

1  1/2 tsp ground cinnamon


How to Make muffin batter:

Preheat oven to 4oo. Grease muffin tin/cupcake tin

Combine flour, sugar, salt and baking powder in a bowl. Place vegetable oil into a 1 cup measuring cup; add the egg and then enough milk to fill the cup. Mix this with the flour mixture. If the mixture seems too thick, add more milk.


Mix in bananas and chocolate chips.

Pour into muffin tin and fill cups all the way to the top. Sprinkle with crumb topping.


To make crumb topping:

Mix together sugar, flower, butter and cinnamon. You can mix with a fork or pastry cutter. I like to use the pastry cutter because I feel like it helps mix the butter in better.


Bake in the preheated oven for 20-25 minutes.
